With only 10g of carbs, 5 grams of fat, 50 grams of protein and only 5 WW points, you cant go wrong with this “go to” VERY filling meal.
1 medium zucchini (sliced finely (vertically) or sliced with a spiralizer)
4 cups of baby spinach
5 ounces of diced chicken breast (boneless and skinless)
1 clove of garlic (diced finely)
1/2 diced onion
Seasonings (salt, pepper, garlic salt)
1/2 teaspoon of oil (i prefer coconut oil)
In a large skillet, combine the garlic, onions, seasonings, chicken and oil. Set the heat on low and keep covered until chicken is just about cooked through.
Add the rest of the ingredients and cover. Cook on low heat for about 5-10 minutes or until the zucchini is soft.
Place on a large plate and ENJOY!!!
Note: If you are on a LCHF diet, you can add some cheese on top for more flavor.
